What is High Pressure Pasteurization (HPP)?

High Pressure Pasteurization – sometimes called High Pressure Processing, Pascalization, or HPP – is an food sterilization method that destroys bacteria, parasites, and other dangerous microbial activity present in human food sources.

It’s an FDA-approved method of preparing food to be safe for public consumption in various product categories.

High Pressure Pasteurization is rapidly growing in popularity due to it’s superior ability to protect the nutrients and extend product shelf life in food that cannot be achieved through heat pasteurization.

What are the Benefits of High Pressure Pasteurization?

Nutrition

HPP is a popular choice for people who want to protect the vitamins, minerals, and other nutrients in their foods.

Freshness

Unlike other pasteurization methods, HPP keeps foods tasting as fresh as the day they were made for months.

Safety

With HPP, you can extend the shelf life of your product from a week or two, to as long as four months!

Natural

HPP allows you to offer your customers fresh products FREE from chemicals and preservatives.

How Does High Pressure Pasteurization Work?

Much like the name sounds, High Pressure Processing (HPP) uses pressure to extend the shelf-life of your products and make them safe to eat.

How much pressure? 87,000 lbs per square inch. That’s the equivalent of being 37 miles under water – far deeper than any oceans that exist on Earth.

By comparison, the deepest part of the ocean is the Mariana Trench, which comes in just under 7 miles deep. If we could go 30 miles deeper, we’d encounter pressures that equal what happens inside an HPP machine.

At these pressures, micro-organisms (such as bacteria) that cause spoilage or pathogenic conditions are inactivated, rendering them incapable of multiplying as they would normally.

While the bacteria in your foods become inactivated after the HPP process, the good parts of food – such as vitamins, minerals, antioxidants, and other nutrients, are NOT destroyed. Why? Because bacteria and fungi are cellular organisms with much more complex needs than non-living molecular chains like vitamins and other nutrients.

The result is a longer shelf-life and healthier food.

What Foods Work Best With High Pressure Processing?

HPP works with cold chain foods. These are foods that need to be kept refrigerated such as milk, juice, hummus, etc.

Dips & Spreads

As healthy lifestyles become increasingly important to Americans, consumers are turning to better, more natural options in every corner of the market.

High Pressure Processing can help extend the shelf-life of your various dips and spreads WITHOUT the need for preservatives:

Guacomole
Salsas
Salad dressings
Hot sauce
Condiments
Dessert sauces
Barbecue sauce
…and more!

Drinks

When it comes to drinks, HPP is thee best option… in our not-so-humble opinion.

Why?

Because juices, smoothies, teas, coffees, and Ready-to-Drink meals help people get the nutrients they need in a form that fits into busy schedules.

This is an excellent opportunity to get those much-needed vitamins and anti-oxidants!

HPP protects these nutrients while extending shelf-life.

Ready-to-Eat Meals (RTEs)

As much as we all want to eat healthier, the modern world stops for no one.

With busier schedules than we’ve ever had before, it can be frustrating for the health-conscious shopper to follow-through on more nutritious eating habits.

That’s where the meteoric rise in the Ready-to-Eat (RTE) meal comes in. RTEs give consumers the best of both worlds – and HPP can help.

When you HPP your RTE, all those helpful vitamins and nutrients are locked in while dangerous pathogens are crushed into oblivion.

Join the Health Food Revolution

People want healthy food. That’s a fact.

While traditional food markets are declining, the health food market has been experiencing growth year after year after year for well over a decade.

With how great people look and feel when we start eating right, it’s no wonder health trends have only been looking up.

Health food is bigger than ever. Here are a few fast facts gathered by the Organic Trade Association:

The “better for you” food category was estimated to be around $1 trillion as of 2016.

The organic food industry as a whole grew 14% between 2013 and 2018.

U.S. organic market was at about $47 billion in 2016.

That’s $3.7 billion higher than it was in the previous year.

Growth in the overall food market was 0.6%.

By contrast, growth in the organic sector was at 8.4% during the same time period.

Produce sales are also climbing at a higher rate than the rest of the market with 3.3% growth in 2016.

Organic poultry grew by 17% in 2016.

Organic dips and sauces grew by 41% in sales during 2016.

Healthy Food, Happy Customers

Healthy is in. HPP can help.

Perhaps the two greatest benefits of High Pressure Processing (HPP) are its ability to extend the shelf-life of your product, and HPP’s ability to do so without compromising the vitamins, antioxidants, and other key nutrients in your food.

While you can often get a good amount of shelf-life with heat-pasteurized foods, as well, the heat destroys some of the very nutrients that made your recipe or food a great choice in healthy eating to begin with.

The solution is a process that gives you the best of both worlds.

Maryland Packaging is the Biggest HPP Facility in the Mid-Atlantic

SQF certification is paramount if you want your foods to get into big-name stores.
