How Does High Pressure Pasteurization Work?
Much like the name sounds, High Pressure Processing (HPP) uses pressure to extend the shelf-life of your products and make them safe to eat.
How much pressure? 87,000 lbs per square inch. That’s the equivalent of being 37 miles under water – far deeper than any oceans that exist on Earth.
By comparison, the deepest part of the ocean is the Mariana Trench, which comes in just under 7 miles deep. If we could go 30 miles deeper, we’d encounter pressures that equal what happens inside an HPP machine.
At these pressures, micro-organisms (such as bacteria) that cause spoilage or pathogenic conditions are inactivated, rendering them incapable of multiplying as they would normally.
While the bacteria in your foods become inactivated after the HPP process, the good parts of food – such as vitamins, minerals, antioxidants, and other nutrients, are NOT destroyed. Why? Because bacteria and fungi are cellular organisms with much more complex needs than non-living molecular chains like vitamins and other nutrients.
The result is a longer shelf-life and healthier food.

As of early 2018, Maryland Packaging will have two co-packing and co-manufacturing facilities located in the Elkridge/Halethorpe areas of Maryland (just southwest of Baltimore).
Our first facility is the perfect place to start if you’re a new or small business looking to grow.
Brand New Second Facility
Our second facility opened earlier in 2018 and is ready to handle large HPP runs.
We’re very excited to add two HPP machines to our line in this new facility. We have two new Hiperbaric 525s – the largest HPP machine in the world to date.
Together, these machines will be able to HPP over 6,000kg an hour.

Maryland Packaging has two facilities.
Our first facility is located in Elkridge, Maryland and houses an Avure 10 High-Pressure Processing (HPP) machine.

The Avure 10 can process up to 4,500,000kg of throughput per year.
